Spacer removal

When I picked up my bike from the shop for purchase I noticed it had 3 spacers under the stem. Has anyone removed those and cut/lowered their steer tube? I'm thinking about taking it to a shop to have it done but I'm curious as I'm sure cables will need to be shortened (shift and brake for sure I imagine). I'm thinking shortening the cable that goes from hub to battery/motor/whatever is probably not easy/possible? I wish I would have thought about this when I bought the bike to ask if they could shorten.
 
Why would you want to remove them?
Yes you could cut the tube. Once it's cut, there is no turning back.
Or flip the spacers on top of the stem.

I've always liked a more aggressive position. I'm perfectly fine flexibility-wise so far at this point of my life. I do realize that I can't go back - been riding bikes for over a decade - besides when i was a preteen. Can't flip the spacers - the stem is integrated.
