Question.
Mission Control to Houston
Can I access all my rides, data, stats, etc. independent of being connected via bluetooth while at the bike, like the ability to review history, etc., after the fact, to comprehend various items to assist in making any mods for customization, or do I need to be at my bike at 1 AM in the garage with it turned on, communicating to my mobile device, as I get bit by mosquitos?
In simpler terms, do I need to be connected live to access my data or?

You can access all your rides from the app without the bike being actively paired. That said, the data is only each ride, not a dashboard with overall statistics compiled. Depending on what you want to see you may either want to pair it with something like Strava or use another device like Garmin for loads of data.

BUT...if I choose not to use Strava, or Garman, or anything, and just depend upon MISION CONTROL, are you saying I cannot get the full benefit of the data accumulated without committing to some 3rd party application that want to share my data with the advertising partners?

You could download all the rides as XML files and compile your own stats to your liking, without any outside app.
