@ old timers here in Washington state...
Wife and I bought our COVID bikes last year as we retired, etc.
Yesterday my wife fell because the thumb throttle is too fast, jumps right out from under her, its extremely touchy...
Mine isn't, different model, bigger motor, etc.
Is this stuff fixable or do you just learn the curve?

Post your question on maintenance thread below. I suspect a controller & throttle replacement is in order, one programmable with lower watts and lower speed in PAS1. You have to list your make and model, and a picture of the controller throttle and connectors would help. I don't know the different models as I own one bike & live in a tiny city (2000000) with only one ebike store, but TJ or Shicks has probably seen it.
The smoothest power application is reputed to be torque sensing. I don't have it, don't know how to buy it for my kit, but I'm in the mood for a purchase. I deleted the PAS pickup 2 years ago for the reasons you stated, and only use the throttle to apply power to my bike. Neither of the throttles I've owned have been touchy. I can add 50 watts if I want to, or 500 if I'm trying to cross 6 lanes on a 6 second green light.

The devil is in the details! More information please. What eBike or kit is your wife riding?
 
Oh goodness, I didn't realize there was much difference, etc....
Here is her bike, a link to the site we purchased it at last year.
Perhaps that information can be found with the site?
