Ebike charging

Abdaddy, you're still correct. Wave a wire at a magnet and current will be induced. In a BLDC, you still have three coils connected to the controller that do that every time they pass a magnet. What happens in a geared motor though is that a clutch prevents the wheel from spinning the motor. The wires are still, because they are rotating at the same speed as the magnets.
