If they're servin beer, could be hours.....

If you're in a hurry and you draw somebody that's good and he's just replacing a spoke, I'm betting it could be done in an hour or less.
I would ask them to look for the reason that spoke broke. Betting they're all loose/under spec.

If you have the new spoke of proper size on the non-disc brake side, and the remnant of the old spoke is just held in the rim by the nipple, they could change it in 5 minutes without taking off the wheel. But what should be done is the whole wheel gets removed, put on a stand and checked.

Been meaning to update... still going strong since the rebuild.
