Why did you choose an Allant 7 vs Allant 8?

For me it came down to price. I was already stretching my budget when I purchased the 7s. If I had a bigger budget but the same value conscience, I would have chosen the 8s mainly for the bigger battery (primarily), Deore 10-spd, and rigid fork. The 9s is a sweet bike, but I still think the 8s offers better value for the price (IMHO).

Interestingly the 7s (speed) has the same MT520 4-piston brakes as the 8s and 9.9s, and this was a selling point for me. I love the brakes! The 7 (standard 20mph non-speed version) has different brakes (MT200) than the 8 (as noted by @Stefan Mikes in post #4). Nothing wrong with the MT200 though... they'll stop you too.

Having owned the 7s for about a year, I have been pleasantly surprised by the Alivio 9-spd. It's been pretty rock solid for me and the gearing is perfect (for me). Nothing wrong with the fork on the 7s (other than being heavy), but I just like rigid forks especially when compared to lower-end suspension forks (I acknowledge that most people prefer suspension forks). I would definitely still like a 625 Wh battery.
 
Once I was seriously looking, I test rode the +7 first and really liked everything about it. Still do. Like rNH, I see no need for the extra speed. I love the frame and I’ve never heard one concern about it. For me the price is better, rack is better, suspension fork is better, and the CX is one of the best and the updates Trek/Bosch have offered have been great options.
Same for me really regarding the speed. The amount of times I went over 20mph I can count on one hand. It’s simply too scary on a bike at 28mph.

edit: also traveling at over 20mph drains the battery lighting quick even if it’s just for 5 minutes.

I travel enough downhills that I go 35 mph often enough for my liking.

When I'm going down a hill that steep, I'm using my brakes. No way am I going to hit a pothole at that speed, or worse. Roads are really winding around here, so you need to keep your sightlines in mind too. I noticed early on that my Allant doesn't have an airbag like my car does.

I hear ya but the hills I’m talking about are ones I take every couple of days. No potholes here.
I do brake coming up on the corners, of course.
 
Well here goes; I shopped online and narrowed my search down to a Giant Fastroad E+ Ex Pro or a Trek Allant+ 7s. Could not find the Giant but the Trek was close by.
My local Trek dealer said the suspension fork may be weak for my weight which is definitely over limit. He upsold me on the 8s.
I took a few days to think over the addition cost of the 8s and also found the low gear to be slightly lower. Of course I liked the bigger battery too.
The harder choice was which frame style. They said I need a size large but I am not comfortable with the top bar so close as I am also an amputee with balance issues. (I am fighting a few challenges)
I ended up buying the 8s Stagger. It is not a step though but gives me better standover comfort. Also the loss of a rack is okay as I have more room to swing my prosthesis over the back and a pannier back holds all I need. The bag also coverts to a backpack.

You can swap the stock deore11-42 cassette for the 11-46 for an easier lower gear and ofcourse slightly expanded gear range. It’s compatible with the derailleur that comes with the allant8s.

I like the pedals you installed, what brand are they?
They are Chester, Race Face pedals with a very pointy surface to help hold my foot on.
 
I'll say I got my 7s because it was the most I could afford, I also got a Verve for the wife at the same time. I am very please with the 7s but the seat is killing me, so I'll give that some time or invest in a seat-post.
