SRAM drivetrain choices?

Looking to modify an existing eBike (long story) and want to stay with SRAM. We ride in hilly terrain, pavement mostly, but some off-road (nothing too technical and no jumping).

Is the EX1 the best since it was designed for eBikes? Only 8 speed, but with an 11-48 tooth cassette it has pretty good range of gearing.

I have a bike with the GX level components, and it seems great. I really enjoy the 10-50 cassette, although I've been warned of the potential for skipping if I apply lots of power in that 10 tooth cog.

I'm also intrigued by the AXS wireless level components. The X01 I think. Very very pricey, but gets you to a paddle for shifting which is far more intuitive than SRAM's clicker shifters. Don't get me wrong - the SRAM GX shifter works really really well, I just don't always remember which lever goes up and which goes down since they both move in the same direction. The electronic paddle shifter would seem to be more intuitive and for us older folks require less thumb action.

Anyway, thoughts on SRAM's offerings and what to choose for mid-drive eBiking would be welcome.
 
I like the 11-32 8 speed that came with my bodaboda, the SRAM shifter was very precise. 32:32 gets me up 15% grades with 60 lb groceries, pedaling myself. 52:11 allows me to help the motor a little at 20 mph. But the SRAM thumb shifter continued to damage my thumb joint, a problem that started when I was riding a 7 speed shimano MTB. That put a 10 cm x 1 cm cyst over my thumb joint. I thought a twist shifter would help, but it doesn't. Both the SRAM & the Sun grips are so short I have to tightly grip it between thumb & 1st finger to make it turn. The SRAM red electric shift would be nice, but it is only for 11 speed rear clusters, only for drop handlebars, and only for their hydraulic brake system. Craning my neck to see over drop handlebars would probably pop a disk in my neck. Plus SRAM patented $100 battery would need replacing every couple of years. My right thumb joint hurts so badly now I only shift the left (front) which gives me 3 speeds, 52:13, 42:13, & 32:13.

I have an SRAM X7 derailleur on my Electra Townie.

I looked at the EX1 as an upgrade to my Mongoose Envoy, but the EX1 is not cheap.

Instead I took a gamble on a 9-speed Microsoft Advent derailleur/shifter combo paired with a Shimano 11-34t cassette. The derailleur is rated up to a 42t rear cog. I have about 100 miles since the swap and it's performing very well.
