One last remark to carbon:
My positive "CF view" is on frames from experienced/well-known bicycles brands and "normal bikes" for everyone/even heavier riders.
At bicycle parts in carbon like stems, handle bars, saddle posts, hubs and especially rims there are much more brands and qualities. Also many of poor quality and not very lasting, here a failure of a part is much more possible and I would never say "Hey, take whatver you want and don't be afraid, it will last 10 years or more...

my thought was if i get tired out on a long ride (would be nice to have some assistance on the way back
Sorry if I'm again the one to spoil the party. But I'm still not sure that you need a Creo or even any kind of ebike.
We still don't know what experience in bicycles you have and also in ebikes. If you didn't ride for a long time and now want to do some sport/some cardio and an ebike just because you MAY need the assistance some day, that'ts not much. An ebike doesn't deliver automatically more fun and better rides. It has disadvantages apart from the price or in other words, pure/acoustic bikes still have their advantages.
The same for the race handle bars, you still didn't say (or I overloooked it, then sorry!) why you want them or if you know them already.

An ebike and any expensive bike is best to be chosen with some experience with other bikes. Then you know exactly, what you're missing and what you can expect from another bike or ebike and what not. Or you may find that you don't need another bike and that the actual one is perfect for your purposes.
Maybe it's better to start first with a normal bike without motor and maybe a used one and see how it is. If it's not enough you still can go for an ebike or a Creo. Maybe better than to buy immediately the best and most expensive stuff to find out later, that it's not what you expected and to buy twice/to sell with severe loss. If the way back home once is to hard you can still call a taxi which es faster and more confortable. And compared to the extra price for a good ebike or buying twice, one call call quite often a taxi...

Make sure it's a full sized taxi and not a uber if you want to bring the bike back as well. Few bikes fit in a Prius with two people I'm told.

We have a BMW i3 as our only car. With 4m even for germany a small car, for the US a dwarf I guess. With two people in the front the Creo fits in perfectly without dismounting anything. I admit, no space left in four directions then... That's of course a point to buy a Creo instead of a beach cruiser bike... ;-)
My hope is that my wife's Vado SL that comes next week fits in as well and we can go "on the road" also further away. Maybe the Vado below, then a blanket and the Creo above with the front wheel taken out. The car would surely be almost full then, not much space left for normal luggage for two people vacations. But some bike bags surely will still enter for a day trip or several days only by bicycle with B&B.

Dismount the non-drive side pedal on your wife's e-bike. Take front wheels from both bikes. Place the Vado on non-drive side in the car. Put a piece of soft material (such as styrofoam) under Vado's fork (that will protect the mundguard). Separate with a blanket, or even better with a large piece of cardboard. Remove the pedal from Creo. Both e-bikes will fit. (I transport two e-bikes in Renault Megane Kombi that way).
