Well not to be contrary but the laws of supply and demand always win. When I was in high school all the intelligent people were predicting that there would be no oil by the year 2000. In reality there is a veritable glut of it now, and unlike in the 70's if OPEC tries to push up the price too much the US and Canada will start extracting even more, since it will be economical to do so. On the other hand lithium batteries aren't made of fairy dust but require lithium, cobalt and other substances that are in limited supply and come from areas like the Congo which are not exactly stable - with market manipulation requiring more EVs and the growth of other electronics it will be interesting to see what happens to the cost of lithium batteries. Of course there are people who will say that some marvelous new battery innovation will take care of that, but in the last 20 years the lack of real improvement in battery technology compared to microchips, memory and even internal combustion efficiency has been our reality.

Any non-electric touring bikes you like ?

I'm a regular consumer of Bicycle Touring Pro's videos. I'd aspire to do some bike touring if I didn't have to work so much (excuses I know). Perhaps when retirement comes. So following the videos of Bicycle Touring Pro, I regularly ogle the Co-Motions. But I'm not very fond of drop bars so I might lean to the Tout Terrains such as this Silkroad with a Pinion gear box:

And I like those titanium bikes from Van Nicolas which I initially spotted in some Bicycle Touring Pro videos:

Don't know what smart people you talked to, but anyone involved in the oil biz knew there were vast amounts of oil. The only problem was we were running out cheap oil - until technology improved with 3D/4D seismic and significant improvements in fracking technology that have turned the US into the biggest oil producer in the world and continuing to add about 1M boed yoy.

Lithium is not rare, nor in any way limited supply. There simply hasn't been the demand to bother building mines to extract it. Even now, big miners say the problem is likely to be oversupply until 2025 as a lot of new mines are coming online. Yes, prices popped, but it was based on fatuous fears of limited supply, similar to the nonsense in oil prices a decade ago when oil hit $140 bbl.
 
Any non-electric touring bikes you like ?

Two well-loved touring bikes are the All-City Space Horse and the Surly Long Haul Trucker

They both come in disc brake versions (which I'd recommend) as well. After you threw on decent racks &c you'd probably be looking at around $2500 for either one.

One pet peeve I have is that I'd like touring bikes to have three-bolt bottle cage bosses so you can put a Blackburn Outpost Cargo Cage or Salsa Anything Cage on your front fork. I rarely want front panniers but I all too often want to carry boots, big jugs of water, or a camera tripod.

I too love and highly recommend bicycle touring pro's youtube channel. Another good one for inspiration and some great ideas (Bike Fishing! Basketpacking!) is path less pedaled.

From what I've seen , but not ridden , I also like Co-Motion and Tout Terrain .
Although I'm more interested in a light touring bicycle .
I see lots of European bicycles that I like , but not too many USA bicycles .
I was thinking of inquiring with Co-Motion about offering a flatbar specific model .
