I did this conversion last year after being in hospital with a bad back, Took a while to sort out compatible parts but worth it in the end. Managed to keep original grx calipers and changed levers to Deore XT. Also added Vado assist button controller on the flat bars.

Interesting. Have you tried to ride your modified Creo in rough terrain? How does it handle now? AFAIK, you would need another geometry for flat bars but I also understand your medical condition and new needs.

On gravel and light trails it handles fine, at high speed road descending it is slightly twitchy, One difference having flat bars has done is stop me chasing every bike in the distance because I think I'm Mark Cavendish.

I did a similar conversion with my Cannondale Topstone Neo Lefty 3 a couple of years ago. I had a problem with my hands going numb when riding any distances over 30km.
I liked the flat bar setup, but I didn't like the extra width the flat bars gave me, and like you I found the bike to be slightly twitchy at higher speeds and when I stood up to pedal.
I ended up going back to a drop bar last year, but instead of putting the stock bar back on I went with a Ritchey WCS Venturemax gravel handlebar and couldn't be happier.

I too have converted my Creo Expert EVO to swept back flat bars due to neck pain issues. I also removed the Future Shock adjust knob so I could mount this sorta radical adjustable stem from Bontrager. My bike has also has and updated drivetrain. Shimano Di2 removed. SRAM AXS 12 installed. This was primarily for simplicity when packing the bike for taking on an airplane. And yes lots of leverage with wide upright flat bars does make descending a bit less steady but mostly you get used to it. Not a racer anymore.
