I would eat the drumsticks,the wild turkey is a powerful critter,the ligaments in the legs are rather hard to eat around( no problem for me in my younger days) of course the turkey soup is boss.With wild turkeys you can only eat the roasted breast. It is rich and flavorful dark meat, like a leg of lamb. Then everything else on the roasted carcass goes in the slow cook soup pot. For some reason juniper berries go well with it.
The legs are mostly tough ligaments. You could make a broom out of them. Start by soaking your mixed beans. After boiling the carcass you need to remove all the bones and ligaments, then set aside the meat while you start the soup by glassing onion, glassing other veg. wild rice goes in last. Boiling all the bones extracts the gelitins for flavor and thickening. I made smoked turkey leg soup yesterday in a pressure cooker. I just heard a report that high fiber foods like legumes are a mood booster. It is the best on a cold day.turkey soup is boss
