Astoria the turkey is still hanging out in Manhattan. I hope this years has kissed the ring, or it won't get a pardon.

With wild turkeys you can only eat the roasted breast. It is rich and flavorful dark meat, like a leg of lamb. Then everything else on the roasted carcass goes in the slow cook soup pot. For some reason juniper berries go well with it.
