New to hills. How to start up from a stop

Solution and new knowledge. So after the hurricane, went riding and changed bikes with my wife and then batteries. My wife's bike made no real noises starting in 7/8 speed and Power Level 2. Mine was really loud. Called PIM and the tech said, 9/10 of noises like mine are after-market rack or fender additions. Sure enough, it was the rack. All this noise because of an inadequately tightened nut on a rear rack! Poor performance was result of me being unwilling to power up the bike with the possibility of damage. Now I have no hill issues.
But, although our two bikes are the same, my wife has a new style battery which is both lighter and more capacity. Big difference in the acceleration of my bike with her battery. 380 Ah versus 265.
 
My son's bike had tons of "motor noise" and it came from the chain guard, which SEEMED to be screwed on tight (I checked it before we went to the store), but wasn't screwed on tightly enough.
 
I start my Rad City in third gear with Pas 3 if I'm at a hilly intersection. I turn the throttle on but do not use it immediately to avoid straining the motor. Once rolling, if the intersection is long, I'll give the throttle a blip to make it across...other than that, I never use the throttle.
