Watched their CCX video and couldn't get over how they didn't even fit the seatpost properly lol...

I had a professional fitting for my road bike years ago. One of those $400 ones that took six hours, computer readouts, video studies, etc. We swapped out the stem, the cranks, raised the seat considerably, changed the handlebars and many other smaller changes. I went out the next day and it was so much easier to ride. I have those printouts and for every road bike I've purchased since then I use those stats.

My leg is almost fully extended on the downstroke, as most road riders and even casual enthusiasts utilize.

On my CCX I noticed that it is quite a bit more relaxed. I took about three or four rides and adjusted it. Maybe it has to do with the amount of assist available so you can utilize a more relaxed position. Maybe it's the frame of the bike. Maybe it's that I've never stood up on the pedals in 200+ miles.

But for what it's worth, my seating position isn't quite as poor as your screenshot but it's definitely more relaxed than on my other bikes. I've noticed no difference in my knees or to a lesser extent, my available power.
 
Oh yeah, you certainly dont need a fancy fit job like you had before, but the old approach of keep extending it until you feel a strain, and then lower it a notch, would work wonders for most people. I like to slide my seat back from the default too, else I feel 'crouched' like my knees are touching my chest.
