Ive read about ebikes for weeks- I still can't decide!

Ok... at this point I think I have read so much that I am simply confused. This is what I want. I want to spend $2k, I want to ride both on paved surfaces and light, beginner type Mt bk trails. I will be climbing some fairly steep hills at times. I may like to do some very long rides and overnight type excursions(but that would be rare.). Most of the time, I will be riding for fun and exercise. I rode an ebike in Portugal and it was the best time I have ever had cycling. I am 5'4". Ive looked at a ton of bikes but damn I get lost in the tech talk. I do not want to have to perform complicated maintenance. Can you give me some suggestions?
 
My first thought is your requirement for "very long ride and overnight". Most bikes in your $2K will have a range around 50 miles. Is that what you consider very long? A second battery will cost between $300-$800 based on manufacturer if you want to ride 100 miles. All the rest of your decisions should be made at a local bike shop if you don't want to do maintenance. The cheapest ebike at my local bike shop is $2700.
 
Thanks. Mike's was a good post. I was able to get the gist of his suggestions. Also, Atlanta doesn't have a great ebike market and the shops that carry them have very few in stock. One shop said they can hardly move them and keep maybe one on hand. There are a couple of shops that have some kind of 'house brand' and only sell it. On multiple occasions I was informing the bike guy about ebikes and trust me that is pretty funny because although, I have read extensively, I am still pretty basically informed. So, my local bike shop is not a reliable place to purchase an ebike-unless there is one out there that I have missed.

Try your local Giant, Trek and Specialized stores.
