    If it's truly down that far, and assuming you don't have it down too far at an unhealthy level for your knees, then by all means lop some off. Look at the end...there is a minimum safety insertion length marked there, something you won't have to worry about. Cut less...you can always cut more later.

    Max saddle height is controllable by the cheap and easy expedient of getting a longer seatpost.

    eBikes generate forces in both directions that ordinary bikes do not. Rad tries to overcome this with rather heavy 12ga spokes, but it is the responsibility of the owner to keep the spokes tightened, again...much more than an ordinary bike.

    I shouldn't worry too much about the weight, as it's spread over four wheels. I'd opt for that power available when needed, if your riding distances demand it...you're certainly not going to be getting 40+ miles out of a 14.5Ah battery in your case, unless you pedal an awful lot.

    Diy, with the assembly video. Use your LBS for accessories...you want them to be there when you need them. Get a set of t-handle metric hex wrenches from Harbor Freight...makes adjustments easy. Buy the blue Park spoke wrench from your LBS.
