Mexico's a Blast! But it's vast like the U.S.A. or Canada. You generally have to Bus or Shuttle Van for traveling medium distances or fly within country. In Mexico, among the many Must See's:
Oaxaca's beach town from Puerto Escondido, Mazunte and Hualtuco with it's 7 Bays in the South Pacific - bring your flip flops and swim suit - and it's Sierra's where you Bike or trek on mountain trail through the Pines between small towns and Villages in the High country - bring a Down jacket.
Guanajuato (Center of Mexicó), prettier than Prague with multicolored houses, Cathedrals, 3 Opera Houses in 3 Blocks, Artists and wandering concert violinists, many treed parks and fountains, cheap French restaurants, a statue of liberty-like hero on the mountainside where you can climb to get the view from inside of his big raised fist ... quite an experience. An actual romantic place to visit.
San Cristobal de las Casis a beautiful preserved Colonial town with fun pedestrian only walking streets in the southern Chiapis state mountains.
Creel, the trendy town in Chihuahua state at the start of the Copper Canyon railroad through a canyon bigger and deeper than the Grand canyon that combines scenery of Yosemite Valley with the Grand Canyon where a Tribe of runners cover hundreds of miles and lives in caves.
But for an unbelievable bike trip try Baños, Ecuador where you can rent a new Aluminum mountain bike with disk brakes for for 24 hrs - ride from there in the Andes through incredible scenery past dozens of very tall waterfalls and hotsprings, zip lining, or in cable car across a deep canyon, rock climbing and trout fishing 62.5 kilometers down to the Amazon - where you can fish for Piranha with a total change in climate, then for put the Bike on the top of a bus for the ride back to take a hotspring bath in Baños where a towering waterfall cascades next to the hot outdoor baths. Super cheap place to live for Adventure Travel of all sorts, Hotel room rents for /month and eating roast pig with an apple in it's mouth costs Or Vilcabamba, the famed Valley of Longevity with terrific scenery or Mindo with over 50 species of Hummingbirds and a riot of exotic flowers and water courses. Surfing and beach life is great on Ecuador's South Pacific beaches and in Cuenca, in this Unesco World Heritage Colonial city's heart, Inca ruins and hotsprings (etc, etc), new light rail and big Expat population is big favorite of mine.
In fact, I Love Latin America. For instance in close-by Guatemala you can mountain ride up the INSIDE of a volcanic caldera where the mountains ARE the inner- volcanic rim with one of the 10-most beautiful lakes in the World, Lake Atitlan spread out below which has 3 other enormous majestic Mt Fuji look-alike conical volcanoes rising up within this lake all surrounded by an IMMENSE Super Volcano! Mayans in woven and embroidered 15th Century traditional dress are the norm and rents are -250/month and taxis are red 75 cent 3-wheel TukTuks or collectivo boats traveling to villages across the crater lake. They will carry or ferry your Bike inside the TukTuks or you can take it on the boats with you.
