Can I use 26 x 2.125 tube on Stromer ST1? Even when ST1 has 26 x 2.15

Here's one example: Let me know if there will be any issues using this on ST1

Having had 4 flats on my ST2, I would suggest you look at heavy duty tubes. You'll be glad you did. The ST1 is a PIA to change flats.

I don't know myself . I have left the originals on, they are supposed to be very good tires

It's not going to be a problem, @Cupid tubes are designed to inflate a considerable amount beyond the listed size. Your 26 x 2.125 will be just fine! Thorn resistant tubes are a good upgrade, like Ravi suggests--they're generally 4 times thicker than a regular tube and adding tire liners, like Mr.Tuffies or a similar product are about the closest to flat proof as you'll get.
