Tall rider / Light Off Road/ Beer runs/ Which bike?

Need help in narrowing down what type of ebike brands/models I should be looking at. Hoping you experts can guide me in the right direction. Been researching and its getting overwhelming. Here are the details:

Im a tall rider 6'2". Im guessing that standard one size fits all frames would not be a fit. Am I wrong?

I want the torque sensor so I can be peddling.

Don't need all the fancy app/digital readout device tech stuff.

Im not concerned about distance or power. I'm not a commuter, this would be for going from my house to the local pub for a pint, or picking up eggs, or just cruising on a local bike path. However, the way I ride, I want to be able to ride through the grass, that field, explore that dirt path. I wont be doing any jumps (that was my younger days), but want the confidence I can go on almost all terrain. (snow even...why not?) The area is midwest, so lots of flat, no big hills. Fat tire bikes look like the fit for this.

I don't need to go fast.

Im older, not a fan of aggressive hunching over like my old mountain bike days, can have some lower back issue here and there.


Any advice appreciated. Budget is $2,500 or less..

Currently leaning towards the RadPower Rip Current, or a local shop has a NCM Asplen plus Ill be looking at soon.

I ride a Juiced Rip Current and love it . I have the standard not the S model $1800.00 . I am 6’3 and have the XL frame which fits perfectly . I use this bike for light off road and street . So far its been a great bike .
 
Just a hair over your budget, but close enough where it should be considered for it's Ultra mid drive and 19.1ah battery -
