Finding torque specifications for bike component fasteners can often be difficult. For safety's sake I think bicycle manufactures should offer an online source, but they offer very little, if any help.
There is a great one stop source for torque specs; Bike Torque Specifications. It is a searchable database. For instance you can search by Brand, category and sub category.
Search: Shimano - Cranksets & Pedals, and the site takes you to a complete list. The following screenshot is only a partial of all the data.
