I didn't want the extra weight and encumbrance of a water bottle on my handlebar, so I went with SKS-Germany's "Anywhere" mounting system (1st pic below).
There's a little side-to-side movement but none up-and-down - it's been very sturdy and easily mounts on any of the main tubes (top, down, or seat).
Blackburn's "Outpost" Cargo Water Bottle Cage (2nd pic) looks awesome for larger bottles and cargo bags, too.
