Shimano 5100 groupset, 11-speed

I'm considering an upgrade of my Vado 6.0 to real "alpine" specifications for my vacation mountain rides. The rear wheel hub is (and it has to be) of the Shimano HG specification, that is, it will accommodate a 11-speed cassette.

Shimano has come with the 5100 groupset, of which these items are of interest to me:

• Shimano Deore RD-M5100-SGS rear derailleur
• Shimano Deore CS-M5100-11, a 11-51T cassette

These two items, together with a steel Shimano 38T chainring would completely "mountainize" my Vado for road trips in high mountains.

The point is, the groupset is Deore, not Deore XT. Will I compromise quality with this upgrade?
Also, I use the Shimano SLX Trigger shifter, 11 speed on my e-bike. Do I need to replace the shifter, too?
