I bought the "EW-Rugged Electric Mountain Bike 350v 36v" by EWheels (https://801outdoors.com/products/ew...0v-36v-by-ewheels?_pos=1&_sid=fdd9c9468&_ss=r) and I was wondering if the "BAFAGN 48V 500W Brushless Hub Motor Ebike Conversion Kit for All Kinds of Bikes 20" 26" 27.5" 700C Rear Wheel 7 Speed Freewheel Electric Bicycle Conversion Kit with Battery" (https://www.amazon.com/Brushless-Conversion-Freewheel-Electric-Bicycle/dp/B07W7WQ2XH?th=1&psc=1) is compatible with my Ebike?

The 7-speed freewheel on the motor wheel should work with your bike’s 7-speed derailleur, provided you buy the 26” wheel size, but the 48v motor won’t work with your ebikes 36v controller or battery. You would have to remove all the electrics and essentially zip tie on the new kit.

Do you now any EBike shops in Colorado that would install the "BAFAGN 48V 500W Brushless Hub Motor Ebike Conversion Kit for All Kinds of Bikes 20" 26" 27.5" 700C Rear Wheel 7 Speed Freewheel Electric Bicycle Conversion Kit with Battery" on my "EW-Rugged Electric Mountain Bike 350v 36v" by EWheels?

Why are you doing this? You have a working ebike. Why take it apart? If you want the Bafang kit, install it on another bike.

Looking at the pictures, the Bafang motor wil be much stronger than what you already have, The Bafang shows a flange diameter of 170mm. The EWheel motor is around 140mm. Bigger size means better ability to dissipate heat.

As far as installation, just look at the old bike and copy it. The Bafang has the waterproof harness. You just match the connectors by color. You cannot get them wrong.

Looking at it from the point of buying a used or new bike ($300) and the kit ($800) plus install, ($200+ if they plan to support the install down the road w/o losing money), maybe you should just buy another new bike. I don't know what tomjasz would charge. install a kit I wouldn't do it for money, too much liability,
