I don't have my e-bike yet but figure I would introduce myself.
After a few years of wanting an e-bike, and then a few months of investigation and research I finally pulled the trigger and ordered a Biktrix Juggernaut Classic, also ended up ordering a Stunner-X for my wife. Now I am anxiously awaiting their arrival.
I plan to use my bike to commute (its only ~3 miles) and on groomed ski trails (to play and during my duties on the Nordic Ski Patrol).
While I fully expect the Jug to be everything I want/need I am an engineer and unreformed tinkerer, so I am already looking into ways to hack, customize, and otherwise 'improve' my bike. Of course I will have very limited funds with which to do it, but that just makes it more challenging and therefore more fun.
