Has anyone installed a rear rack + mudguards on their Haibike? Any recommendations?

I can recommend Velo Orange Leather Mudflaps, if thats what you are referring to.

They work great as an addition to fenders...as I have found fenders are not 'long' enough to cover water splashing from the wheel turning. They were easy to install, although you have to drill a few holes in your fender, the mounting provided is perfect and the leather is great at keeping flying crap away.
 
I installed an Old Man Mountain Sherpa rack on my Haibike Allmtn Full Seven Plus four (or more) years ago. It is a very strong rack, supported by the axle. (You probably will have to replace your axle with a longer one, as I did, which Old Man Mountain also sells.) I carry panniers loaded with professional photo equipment, including three cameras, long telephoto lenses, and tripods, as well as backpacking chairs, and burly bicycle locks and cables.
 
I installed an Old Man Mountain which came with a new axle. The only issue I had was attaching the supports to the frame. The method that OMM provides is pretty cheap and annoying so I designed and 3D printed my own

Nicely done! Yes, I remember buying some electrical brackets for my OMM rack four years ago. Yours are nicer. The rack itself has been solid and trouble-free, always carrying my Ortlieb panniers full of photo equipment.

I really like this solution and was considering it for my bike, however I couldn’t find any in stock. I also wasn’t sure the strap attachments were going to be very secure on the triangle profile of the Haibike. How is yours holding up?
Very good! I often check that everything is tight because if it is not it will slowly ride down the stays. I often carry two batteries on it when I am touring but I would not ride on the blue rated trails with more than one aboard. I found that tilting the adjustable top part as far forward as I can gets it under the seat and centers the load for the best feel. Of course you cannot use the dropper when it is in that position so that is for touring only.
