Fat Tire EV in the $1k - $1.7k range. Help me decide

The data and reviews on EBR site is fantastic... I had no idea that there was this many bikes in the marketplace. I was originally looking at the Lectric XP 2.0 step-through, but then wanted to see what alternatives might be good out there. Here is my 'wishlist'.

Must: $1000 to $1,700 price range
Must: Go at least 28 mph
Must: Range to be at least 25 miles without pedaling (up to 40-60 miles with Peddle assist)
Must: Have at least 500 watt motor
Must: Have fat tires (preferably 3" or larger)
Must: Be available on/before August 2021 (preferably sooner)
Preferred: Style - ideally either scrambler / moped / or foldable style
Preferred: Fork front suspension and rear suspension if possible
Preferred: Hydraulic disc brakes (but could live with mechanical disc)
Preferred: Have LCD screen with USB port to power phone

The ones that I have found that seem to meet this are Ariel Rider X Class 48, Rad Runner, Lectric XP 2.0, Sondors, and Espin 21 Nero

1) What other ones should I be looking at?
2) Any strong opinions one way or the other about these?

With the spec you're looking for.. I think you should lower your expectation or raise your budget.

Why do you say that? I found a number of bicycles that meet the specs that I want in the price range that I am seeking.

I don't know about the others, but the Espin website says the Nero will only go 20 mph, not 28 mph as you listed as a minimum.
Fat tires are typically 4" or larger. 3" would be more of a plus size tire.
Last year, I was originally interested in a fat tire bike, like the Juiced Ripcurrent S and Espin Nero but I decided the additional weight and rolling resistance wasn't worth it and went for a bike with 2.4" tires, and am glad I did.

The RadRunner isn't a folder, but their Mini is. RadPower bikes enjoy a huge fanbase - they do a good overall job on their bikes and customer satisfaction. I highly recommend them for new-comers to the ebike phenomenon.
Have you ridden any bike at 28mph for any length of time? I find it downright scary, and I spent years on motorbikes at speeds over a hundred.
Class3 bikes are generally prohibited on bike paths and trails and such. YMMV.

Thank you one and all. I think that I am leaning towards the "Ariel Rider X Class"... Why?
$1600. Hydraulic brakes. Can do 30mph if needed with 20-50 mile range. Both front & back suspensions. LCD w/ USB port. Can carry two people (wasn't considering this, but now that I see that option).. Cool looking motorcycle light on the front. 750 watt motor (1,500 peak) with metal gears. Easily removable battery Includes fenders. And I like the blue and red colors.
Shipping mid-June (and free).

The other options in this price range either don't have dual suspensions, or no fenders, or extremely long shipping times, or mechanical brakes.

Would still love some feedback if I am missing something or there is a better choice.

The other one that I almost got was the Lectric 2.0 XP. That really is a nice bike, especially for $1k, and I loved the folding feature... But,
1) No rear suspension (but can add seat-post suspension)
2) Mechanical disc brakes (not a deal breaker)
3) No USB ports on LCD (not that big of a deal)
4) Can't hold two people (and I know that my sons would want to ride on the back)
5) No quite as fast as X Class, but it is close.
6) Personal preference: The red and blue options of the X Class were more striking then the white / black of Lectric

The page you linked to says, "The steepest inclines can’t compete with the 750 Watt Motor, the key to your Espin’s powerful, smooth propulsion. Comes equipped with hydraulic disc brakes and integrated motor cut offs that make for a smooth ride with throttle or assist up to 20mph."

Class 3 has a legal limit of 28 mph with assist, but it won't necessarily go that fast, it just isn't supposed to go faster than that.

For a moped style / scramble style bike, I think that it is one of the best looking ones. It obviously is very different than a regular bike... This will allow me to take my son on it, to carry more stuff, and make the commute to work fun (plus the ability to do none-paved riding as well). Electrek did a good review of the 52volt one (which I didn't opt for as I didn't need the extra power/battery). I got the blue one pictured below, and here is the video review of the 52v

Haha, yep. When I was 12 I got one similar from Morini of Italy. Looked like a Honda QA50, but had a 2-stroke motor. That would have been about 1969.
The one before that had a lawn-mower engine in it.
