Disc brakes on new leisure bike sounds like toilet flushing

Sounds like you got replacement pads and may be set... But for what it's worth, I've heard this exact sound on several different hydraulic disc-brake equipped bikes. Kind of surprised that more people haven't. Most recent one was a Juiced RipCurrent S, but last year it happened on a new Trek Verve+ 2. That noise starts happening after I ride it in rain or other wet/muddy weather. I just clean off the rotors with a clean rag and rubbing alcohol and it does the trick.

I'm just guessing here, but I presume that cleaning them immediately when the noise starts happening will help to keep the pads themselves from getting damaged and needing replacement.

No rain. All dry. Pads were cleaned, and then sanded. Neither made a difference. This was all done by a pro ebike shop. After this, they got replaced. Now, exact same riding conditions, exact same km, and not a single noise.
 
Okay, I had the toilet flush, waterfall noise on hard breaking. I removed, cleaned, sanded both discs, with some positive results, but problem still about 50% there. Next, I ordered resin pads (link in this thread), and put them on this AM. I never changed pads, so it was a bit of a slow go, but very basic job. I cleaned discs once again. This time, I did the bed in myself.

Lots of info on bedding in, but I followed mainstream advice, and after I was done, WOW. Great braking on my Rize X, zero noise. Problem solved.

Glad to hear that you solved the problem with the stock rotors and pads... what brand did you use?
