How noticeable is the absence of a differential on a front wheel drive adult tricycle
Does the absence affect stability in turns

some delta trikes have a differential(had a trike with a differential) even so compared to regular bike it feels weird until you get used to it, even the geometry is weird "Ackerman" wise so you can successfully ride one, you have to understand the limitations on the handling, the "Tadpole" trikes handle quite well I am told. If you are building a trike theres a company in South America that makes trike differentials.

Little confused. Are you saying tricycles with differential are weird compared to without? What is Ackerman wise?

I am sayin

Pay attention trikes handle differently than bikes," Ackerman Principle- all wheels will follow a different 'arc" in a turn named for the engineer that recognized this and showed it to the layman.
