Convert mountain ebike to comfort bike?

I test drove a friends Eahora XC100 mountain ebike. The ride is what I’m looking for but the lean forward is a few inches too much. I’d like to convert it to more of a comfort bike, along the lines of a Jamis Hudson.

Is there a way to change the stem to one that is angled up and replace the handlebars to something like a mid-rise, like you see on a typical comfort bike? The Eahora Cruiser handlebars come back too far for me.
 
Generally very easy to put a stem riser on these bikes (they normally have cable/hose lengths which are plenty long enough to be used with raised bars).

Both cheap too.

You can also revise the handlebars themselves with straight bars with rise, or with bars with rise and back sweep. A little more complicated and expensive, and sometimes cable and hose lengths are not quite adequate, which will lead to more costs and hassle.

But installing one of the first 2 cheap and simple options make a large comfort difference.

Unfortunately that particular bike seems only to be available in one size. Not an issue if you aren't tall. But if you are tall then you may need to have the seat post pretty well extended. Doing this raises the seat as compared to the bars, which causes the rider to put more weight on the wrists/bars. Shorter riders will automatically be more upright, with more weight on the butt and less on the wrists. So bike size/fit is also an important aspect for comfort.
 
Sure, any stem can be changed and all kinds of bars are available. Your limit will be how much slack is in the cables and wires, but those are no barrier to a bike tech with electrical skills.
