I am considering a slightly wider tire size for winter use. I was wondering if anyone was running a wider tire and, if so, how much wider? I know the front has a bit more clearance on both sides to accomodate but the rear is the tricky part. It looks like there is not as much room in the rear (in lower gears) before possibly bumping into the chain. Any thoughts appreciated.

Measure the frame and tire width (including side treads/nubs) scrupulously. I Had 4" tires on my fat bike, and ordered the 4.5" Kenda Juggernaut Pro Tubeless tires. The side nub/treads were rubbing on my frame so I had shave each of the side nubs off of the tire to make it fit. Pain in the rear.
