I'm so sorry for your loss and can only imagine what it's like to have a bike stolen. I did meet someone who had a similar experience though, and I saw what he went through.
He was a fellow rider I would frequently meet on a local bike trail. I met up with him one day last year and he was riding a cheap Walmart bike instead of his cherished Specialized Turbo Vado. Almost tearfully, he told me it had been stolen when he went in the Post Office to mail a letter. He didn't bother to lock up the bike and was only gone 5 minutes, but the bike was gone when he came back.
I ran into him again a couple of months later and he was riding a Vado again. I assumed he had bought a new bike, but he told me he managed to recover the one that was stolen. He saw an ad on Craigslist and was able to identify it as his bike. He notified the police and they agreed to have an undercover cop go with him when he went to see the seller. Luckily, he had the bill of sale with serial# which let them verify it was his stolen bike. The seller, and likely the thief, claimed he had found the bike, but was arrested anyway for possession of stolen property. It was indeed a rare but fortunate set of circumstances.
While you're saving for another quality bike, you might try checking Craigslist, Facebook Marketplace and eBay. It's possible the thief may try and sell the bike for $$. Small chance you can recover it, but it's worth a try.

Update - contacted by a detective from Boulder, he saw a pic of - apparently - my bike on the phone of a thief he busted, tracked me down thru Bike Index, says he believes they will find buyer and recover (not holding my breath). Bike was distinctive for color - bright cyan - and had Suntour suspension seat post, Jones Bar Loop 2.5 handlebar, front and rear baskets/liners. He couldn't see serial # tho. I also have original bill of sale.
Guess one lesson is accessorize! Don't look like everyone else.

My homemade battery brackets and Moniker are a dead giveaway.
Petaluma Hates my ebike, and Stephan says it's just cheap garbage, so I've got that level of disinterest and disgust by known professionals to help deter thieves as well.

Man, I’m sorry — losing a bike like that is a gut punch, especially when it only takes that one time you break your routine.
For your next one, the Velotric D2 at ~$2k sounds like a solid move, and buying through ABS is smart for support/service. I’d also go a bit overkill on security this round (U-lock + chain, and maybe a hidden tracker).
Hope you end up on something you love again soon.

Yep,I'm getting to the point that if the business can't recognize that more people are using bicycles of any value to get around, and simply install a place to lock up, we usually go somewhere else when biking, I hope bobsiii recovers his bike.

Sorry to hear that you should file a police report, and let your LBS know about your bike being stolen.
for your next bike make sure you either get a Air tag I-Phone or a Tile for Android Phone these will help you locat your bike via GPS then you can call the police to recover your bike, and ofcourse use your lock. Wish you luck on your new purchase,

8 years on same bike using a stainless sling from mcmaster and a $12 Master padlock. I shop, go to concerts, work a volunteer job. Weird is good, per post #24. I could cut the sling in 45 minutes, but I am an ex factory mechanic. No videos on Utube showing how to cut that. I have had 3 lights stolen or vandalized, 2 tires stabbed through sidewall, $50 of tools and box stolen out of pannier. Girly bikes don't attract thieves that are mostly male. I am male too, but I don't like lifting my foot to my waist level anymore. When parking at the Greyhound station (near Sec 8 housing) or across the street from the county jail, I use an Abus 82/90 lock but it is a PITB to get the sling eyes into the gap.

By sling, do you mean a wire rope with crimped eyes? What diameter? What length?

6' x 3/8" for everyday in Jeffersonville. https://www.mcmaster.com/8942T547/ At the Greyhound station, county jail, or Louisville concerts I add a 6' x 1/2" https://www.mcmaster.com/8942T831/ through the frame and the 3/8" sling through the motor wheel. The 1/2" tends to squirt out of the pannier. 6' will go around a light pole, or a gas meter feed pipe, or a live 480 v conduit. No toy city supplied sheet metal pipe tethers for me. Somebody cuts down a light pole to steal my bike, laying hot wires all over the street, attracts some immediate attention.

Bike is car replacement. I brought home groceries, home improvement supplies, went to concerts & church, ate in restaurants 17 years without a car. You cannot do any of those by staying outside the store/venue/restaurant. Only AV block caused by ablation surgery 4/25, limiting pulse to 60 with breath 90 cpm, drove me to buy a F150 truck I also needed for 8' long plywood & 80" doors. Vari-speed pacemaker installed 11/25 allows me to build up to health again just in time to save embargoed gasoline.
