Trike Rear Disc Brakes - Each wheel or mid axle

My wife has had a Pedego Interceptor for several years however due to physical issues we think a trike is going to be a more appropriate ride. We're aware of the turning limitations with a trike and it being prone to tip if you're not careful. One of the technical issues is the rear brakes, some bikes have a disc or each wheel and some have a single disc mid axle. I'm not sure what the pro and cons are of each type or if it's a critical issue. Most of the systems I've looked at that have the disc on each wheel are the mechanical disc as opposed to hydraulic disc. Her current Pedego has the mechanical and they're a pain to keep adjusted and definitely not as quick to stop compared to the hydraulic.
