Thinking of converting a Creo to flat bars.

not totally sure but you would have to replace the brakes as I don't think the levers for flat bars are compatible. then the shifter of course but thats the easy part. so you would have to have new hose run for the brakes unless the new ones use the same hose. with Shimano you never know.

The shifters and drive train will be the most challenging. Some Shimano road and mtb parts are cross compatible and some are not. If it's a gravel version Creo it might be a little easier. Probably should list which model and year since each level has different components. Hoses and cables will be trivial compared to the components.

Looks like you have Shimano RX812 GX, Shadow Plus, 11-speed rear derailleur and Shimano GRX 810 hydraulic brake levers, mechanical shifting.

I'm in the process of gathering parts to do the same thing to my Cannondale Topstone Neo Lefty3 (Shimano GRX groupset).
The parts on my bike are different, I think, but here's what I need replacing:
1. Koga Satori Denham handlebar (on its way from the UK)
2. New Deore brake levers, which my LBS says will work with my Shimano GRX calipers.
3. New Deore shifter.
4. New Deore XT rear derailleur.
5. New Ergon GC1 grips.
