RipCurrent S - possible to change display from stock?

Ripcurrent and Ripcurrent S are still on my list of bikes to consider, but I'm not a fan of the tiny screens (eyes not great) with integrated buttons.

I'd prefer a center mounted, larger screen with a remote button pad over where the stock display / buttons are located.

Would this be a big deal, and what controllers / button pads would work w/out troublesome or expensive wiring mods?
