Pannier bags for Yamaha rack?

The Yamaha rack is a little different than many traditional bike racks, any thoughts as to pannier bags that you particularly like on it?
 
Both Axiom and Ortlieb works well on the Yamaha's we've setup with panniers. The Ortlieb E-Mate is neat because it has a holder specifically for an additional battery. Otherwise the Axiom bags are a great value for a roll top dry bag.
 
I wound up getting larger sized Brooks bags a couple of weeks ago. Should have mentioned it. They’re pretty nice. I can carry at least 6 wine bottles or two six packs in each.

Wondering what the Rackmate snap on adapter might be useful for.
 
The Racktime system is pretty cool and is finally stocked in the states. They've got several top bags and panniers that click into the rack. Be aware that you have two options, narrow or wide spacing. They have some baskets that specify the wider clip system, the Connect has the narrow system. The bike should have come with a plate that clicks in, you can hard mount any bag to that plate. A choose-your-own adventure.
 
I inherited a pair of Kirtland Pursuit Panniers (from 1988 - 1990 or so?) - very high quality. They fit beautifully and fit on quickly with hang over clips and one hook.
So to replicate this one would need to look on line for vintage bike touring type panniers.
I have seen some online but they are rare. Here's how it looks (one):
