Need Advice Concerning Motor Size

So, I was able to find a buyer for my Biktrix Juggernaut - which would not fit in my Komo Carrier attached to my RV. Looking, now, for a folding eBike that will. I really like most everything about the Evolo Quest Max. I want the Gates Carbon Drive, mid-hub, and Nuvinci 380 (or equivalent components). But one thing has me wavering: Motor size.

I weigh 250 on my best days, and 260 on my worst. I am trying, but losing the pounds is a slow process. What motor size will be okay? All the Evolos I like only use 350W Bafangs. The QuietKat has a much larger motor, but is sold out most everywhere -- and the design is a bit industrial-looking.

Tell me if you've had any experience with a 350W / Peak 600W (as I recall) motor. Or if there's a decent Guide. Some I've read tell me they don't make a motor large enough. Others say a 250W is plenty. I know a lot of it comes down to where you are riding. I will not be doing off-trail mountain bike activities. Mostly riding on paved paths or access roads to scenic sights in the Parks.

I'd also like to run Fat Tires, need a rear rack (maybe a front basket, too), and fenders. Front suspension is desirable, too. Thanks!
 
The combination of the Bafang 350w (nominal) mid drive, Nuvinci and 20" wheels should get you anywhere you want to go. In looking at the model online it appears that the grey one on the site has a larger chainring than the blue one and I would specify the smaller chainring if I was you as it will provide lower gear ratio's overall to compensate for your weight. You will probably want to take advantage of their perfect saddle guarantee too.
 
I will look into that, but I think the chainrings are both the same size. I will be only 23 minutes from their headquarters when I arrive at my RV there so it will be an ideal time to take a test ride. I was worried that 350W simply would never be strong enough. But I won't be mountain climbing with it. I was fascinated by the Fat Tire concept, but not sure I can have everything unless I go even more money and a stronger motor -- in most cases, giving up the Nuvinci and Belt Drive.
 
My two most used bikes, wife and I ride around a 6 mile path nearly daily, are 36v 350w. Now nearly 5 years old. I’m planning on two DIY folders and have two new old stock BBS01 250w. I found that much over 20 on a 16” wheel tends to be a rough ride. I have several other motors from MAC, Bafang, Mxus, and eZee. All overkill for a folder IMO.

Bike Friday has a build for heavier riders, and ebikes.ca has a great front wheel kit. I'd be looking hard at their bikes. OR my favorite, Brompton kitted by ebikes.ca.
 
I'm way over my frankenbikes limit for weight, 180 lbs plus battery, backpack etc. I had to put magnesium rims on it, spoked rims could not handle the weight and abuse, and changed the 16 tooth hub gear for a 22 tooth for more power and i have a 450 watt frame mounted motor!
If i was you i would go 750/1000 watt 48/56 volt mid drive
Better to be overpowered than under.

I fine Evelo's Gates carbon belt coupled with the NuVinci a pretty cool concept. Nearly zero maintenance. I know people who are using the Yamaha Steps 250w motor and doing just fine with it. I think you'll be better off than you think. Smaller motor, less stress on parts and improves the range possibly?
BTW, you will find Evelo has raised the bar on customer service pretty dang high. They are awesome to work with!

To answer a few specific comments...
1) I will definitely check out the other manufacturers that were suggested.
2) I did look at the QuietKat -- but no fender kit that I found. A bit steep in price -- but, of course, a great motor.
3) I do already have a Brompton that folds and fits the side compartment on my RV - without electric. I will be looking to see it, probably (never ridden but twice).
4) Yes, my biggest concern is my own weight (blame part of it on my genese). The builders all say "Oh, we only state this limit... but it's really not a hard rule. You'll be fine." Even the ones who only offer a 250W Motor. Somebody has to be fibbing a bit!
5) Gates & Nuvinci -- I have that combination on a not-electric Sport Acme that I bought back in 2012 (?) - non-folding. I love the quiet and low maintenance. The rear hub did leak oil on me and I've got the kit to replenish it -- just need the weather to cooperate. I will be selling it, too.
