Minnesota E biker. Winter getaway suggestions??

Getting the itch to ride and it’s well below zero and snow on the ground here in MN.

What locations would have decent temperatures, safe roads for E biking, and some interesting scenery etc? Roadways along a river etc

I’m thinking I-35 South….Kansas City and beyond?
Bentonville or Eureka Springs or ??
It’s hard to tell just eyeballing a map.

Done Texas Hill Country before but that’s too far.

Although I can't make any specific recommendations for you in MN., I'm in the same boat here in northeast PA. Other than the obvious places, like Florida & southern California, there aren't many spots in the continental US that are consistently suitable for riding in relative comfort. Shipping a bike & battery is only feasible for long term vacations so that limits the possible trips to those within a reasonable drive distance. It's tough to predict the weather more than a few days out which makes planning such a trip difficult.

In my case, I'm willing to drive 300 miles or so for a 3 or 4 day trip when the opportunity arises. I watch the local forecast for suitable places within that radius and keep my bike & gear ready to go on a moments notice. My biggest problem is snow cover. Even if the weather is suitable, riding on slippery roads & trails is something I no longer feel comfortable doing. If I'm lucky, I'll get two or possibly three such trips in during the Winter season to some of my favorite places in VA, MD, NJ, CT, WV, and PA.
