I have a fat tire ebike that was a 250w hub motor that I switched out to a 750. And it didn’t make much difference. What else can I do to make it perform better? And can I put pedal assistance on it? ( witch I have off a dinner bike) if so where do I wire it to? Because I only have small screen throttle combo

You might want to look at changing out the controller for a higher amperage one if you're looking for better performance . . . . and then maybe change to a higher amperage battery shortly after

Welcome to the forum, hope you like all the good things that can be found within these treads.

More info is needed about your new setup, what motor, controller, display you have to dial in the appropriate steps that may help you out.
Pictures help to identify correctly parts that have been used.
With a 750 watt motor vs 250 watt you should definitely see a jump in performance providing it is configured and wired correctly.
I am not doubting your ability to connect it all together it`s just sometimes we overlook things that may make a difference in the final outcome ( have overlooked thing or two many times myself ).
