I have a 2020 ecotric rocket and it's almost perfect. My one concern is the gear ratio. I find myself riding in high (7th) gear much of the time and never in 1st or 2nd. Can a larger front sprocket (chain wheel) be fitted and if so I would appreciate suggestions on size and where I could purchase one.
 
Since you mentioned 7 speeds, it seems safe to assume you have either a Freewheel or Cassette rear sprocket. If you can determine how many teeth your high gear has, perhaps you can change the set out for one with fewer teeth? The ratio from front to rear sprockets generally means you'd need to go up 4-5 teeth on the main to be the same as 1 tooth on the rear, so not very practical. I have a bike that came with a 14-28 tooth Freewheel and swapped it to a 11-28 and it did what I think you are hoping for. Fewer pedal revs for the same rear wheel revolutions.
 
I like this online calculator to help model the effect of changing bicycle gearing. Put in your current setup and see what mph you get for your cadence (rpm). Put in some other cassette/freewheel ratios and see what happens. Very handy, and free!
 
You probably have a typical 14T-28T 7 speed freewheel.

It's possible to install a 11T-28T freewheel, made by DNP, available on amazon for around 40 bucks. A lot of people with rear hubmotors, including me, have gone this approach because we wanted to slow down the pedal speed.

Use the above calculator to see the actual difference between 11t and 14T on cadence. It will be 21% in relative terms.
