Fat Tire bike on Tour

I am considering taking up Ebike Touring in the south east U.S. I am 59 years old in decent shape. I currently own a 2018 Voltbike Yukon 750 Limited I purchased new. I find it comfortable to ride and stable. I am also considering a cargo bike for this due to their carrying capacity. I really would like some input on what you folks are using and if what I own would be a good idea to use or should I invest in a cargo bike or something else.

I had a fat tire bike in the past and would not recommend not suggest for a cargo bike.

I tour with a fat bike, and I see very few issues. The biggest issue is mileage. I have 2,540 watt hours of battery on my bike and don't sweat the range very often. I have a 15 amp charger and it charges pretty fast. I take enough breaks to charge up with my system. Furthest one day miles was just over 170 miles.
