All the inexpensive bikes seem to have have the Textro Aries 300 calipers. I used to aspire to them when my first converted ebike only had rim brakes, but I learned they were the common denominator of disk brakes.

Converting from rim brakes to SRAM Avid BB7's mechanical calipers was not necessarily an improvement for my bikes. A good set of rims were always quieter, and often felt better. A lot of entry level ebike owners are converting to cable actuated hydraulics. I've not tried that. I have installed Shimano hydraulics on one bike.

Anyway, 100 dollars on ebay will possibly get you a Shimano quickfire trigger shifter and a front/rear set of Shimano levers, tubing, and hydraulic calipers. Drops right in, except you have to glue on some $20 switches to keep the electrical cutoffs. . They're just inexpensive bit/pieces. No need to obsess over not having them. And $7 for a good bell at Walmart.
 
Hey Harry! I actual just installed some Shimano MT200s on a MTB Build I'm doing, and it was MUCH easier than expected :p Definitely a recommended upgrade, in my opinion. It's not electric, so i didn't have to worry about the cutoffs, but an excellent tip for someone who wants to keep that feature if their bike has it!
