About the cassette?

Having never fooled with one i have a question. Can i remove the two or three largest spockets, reinstall the cassette and use a spacer on the outboard side to make up the difference? This would help with chain alignment and i don't need or use those low gear cogs anyway.

Yes you can, but you will need some special tools and change the end point of your derailleur. I removed 3 gears, skipping one, from my 9 speeds MTB cassette to improve the chain line after I replaced the front chainring.

Given the chance, and my riding style, I would delete the 11 tooth, a well known high wear item that is hard on the chain as well. If that leaves you hamster wheeling, go to a bit bigger ring gear to compensate.

Yes, I probably did not need the 44t CR.

The smaller gear sprocket could not be removed, it's the lock nut of the cassette.
