    I second JM suggestion. In fact, from all my trips to Italy Rome and Amalfi Coast (especially), I would stay walking on the sidewalk with my eyes wide open or ride the bus with my hands in my pockets covering my wallet.

    You need to reprogram the controller to change the top speed limit. Very unlikely. Enjoy the bike as built. For more speed, explore another bike. For instance, my Ride1Up LMTD allows changes to the controller with speeds slightly higher than 31mph.

    I'm 78 and like long rides. With my Ride1Up Prodigy V2, I carry a second battery. 60 miles with over 5,000 ft of climbing. A more level ride would probably surpass 70 miles.

    Replaced my Kenda tires with Schwalbe Big Ben Plus on the Velotric Discover 2

    I've been buying tires from England for years. Best prices by far. I like Schwalbe SuperMotoX 27.5x2.4 for all my ebikes. Some have been going over 6,000 miles and still look almost new. I do like longer schrader 60mm valves for easier inflation. I think you'll like your new Schwalbe tires.

    I believe they have a storefront in SD where you can try out bikes. Rear Fender requires rack. Rack requires fenders for stability. I think rack/fenders were designed to be one unit together.
