Those aren't really fat tires, I wouldn't even call them "plus" tires. My Ride1Up has 2.4" tires. Fat tires are commonly 4" - I think too wide for most purposes.
You could change the gearing. Instead of having the bike do all the work, use leg power to help climb the hills so that motor isn't doing all the work. You'll get some exercise that way also.

After further examination close-up, I have the say everything looks great. It's not a glossy paint job, but it looks good, and the welds look good, and some are smoothed out as well. My 700 didn't have have a scratch.

The mid-drive motor doesn't need amplification of torque through the bike's drive train. There's already a lot of gear reduction in a mid-drive motor for increased torque, more so than a 5:1 geared hub.
