Same problem on same bike after upgrade to Big Apples. Ride suites me fine but my mileage and speed functions are way off. I don't know of a hack to adjust the outer tire size from 700c to 29" on the RideControl app but I bet one exists.

If you haven't tried but there is a new version of RideControl 1.4.2. Download then perform a firmware upgrade to your bike. Maybe?

A significant upgrade in RideControl app to version 1.4.2 is it adds an 'update bike firmware' option and you can check and verify firmware updates. Version 1.3 of RideControl didn't have any way to check for firmware updates.

Serial number for the 2020 Explore E+ is stamped on back left side of the chain stay length. The number is right below where the disc brake is mounted. It's stamped into the frame then painted over so is not clearly visible.
