I just purchased two of the ecotric 500 watt folding bikes to take with us in our motorhome. Want to do some mods such as thumb throttle and led display. I also bought a 500 front hub to make my own mountain bike conversion. Wife and I are in our early sixties and very close to retirement so thought they would be a perfect fit in our cross country journeys. Looking forward to gaining some knowledge about ebikes!

Your controller may not have a throttle connector. there’s no display?

It currently has a twist throttle and on the handlebar has speed control and battery leds with a cruise button.

Then no problem with changing throttle syles. Be aware of two types when ordering 2 wire and 3 wire. Best to get a match. Less confusing at least! Displays are often loaded with firmware, programed to a specific motor/controller.
Google might find an am=nswer or the maker should know which displays would be compatible.

A three wire thumb throttle is about 10 dollars on ebay. I doubt that ypu will find one with a plug that matches the Ecotric (I have the 20" folder). I took a brief look on Ebay and didn't see one exactly the same.

You can cut the plug off the Ecotric throttle and splice it into the new one. Pretty simple.

By the way, go with a rear motor on that mountain bike conversion. Alloy font forks can/will break wit a powerful motor.
