Need help selecting

I'm looking for a trike or an ebike that can accommodate adult training wheels. I'm a 66-year old disabled woman. Normal weight. 5"6". Have ALS but very slow progressing. My balance is okay but will get worse. Mainly knees and feet have issues. I miss my mountain bike but can no longer peddle. I live across the road from Daytona Beach. I'm looking for something that I can put in my Honda Passport and take to state parks, ride light trails (no hills in Florida) and, of course, cruise the beach. I probably could manage a standard ebike right now but not very far down the road. My budged is $5,000.

Thanks for any help. Not interested in recumbent but very interested in comfort and the ability to sit straight up.
