I have not eaten a termite's tail in something like 15-years. At that time I was living on a mountain top overlooking the sea in the redwoods. After a first Autumn rain they would swarm with wings. You should probably fact check me on the probiotic part. But how many critters can eat wood and digest it. There were also bioluminescent creatures in the soil there. My latest go to snack is a tub of cottage cheese with Kalamata olives and artichoke hearts.
