I thought Giant made a huge mistake by going to a smaller battery while everyone else was going larger. I'm glad Giant finally realized that people want more range, which means bigger batteries (or a huge weight reduction).

Very cool bike! I have seen a Euro Giant reseller list battery upgrades for 2020 Giant eBikes replacing 500wh with the newest 625wh battery. Huge replacement charge of over $700 US. The item was listed as currently N/A for many models. The price may drop but Giant branded batteries aren't competitively priced. It's comforting to know there's potential of having 900wh on board if you decide to go Frankenstein on that beast.

I don't see any 27.5 x 2.4 tubeless available for pavement , just gravel or off road .

Schwalbe Both the Big Apple &, Big Ben come in 27.5 size to 60mm. I have 700c X 60mm Big Apples on my Explore E+. Very durable tire!

Looking on the North American Schwalbe site :
As far as I can tell they are not offered tubeless .
Also , they are not rated very high across the board ; ie. protection , durability , etc . (Big Ben , but Big Ben Plus does have high protection ,)
And I don't see the 2.4's. .

I have the 375Wh battery, would have been nice to have a 500Wh (assuming no price increase, lol!) but i dont need anything beyond the 62 miles the 375Wh gives me anyway

In the 700c size the Big Apples go to 60mm, which is as wide as my stock Giant rims dare to hold. After putting over 4 hundred miles on the Big Apples I'm a real enthusiast to high performance balloon tires. It's just something that once you experience it - anything else seem wrong. (That's for a hard surface eBike and at age 69 'high performance' is relative.) I swapped the stock RST fork suspension for a quality 29" Fox suspension fork that could allow 29" rims but 60mm is as large as the Explore E+ rear wheel frame-set can clear. My factory stock Giant Gravel II tires had three flats within my first 20 miles. Since I switched over to the Big Apples I have 0 issues and adjusted the tire pressure after 200 miles of riding. Everybody on the forum has an opinion on tires, that's mine. Your mileage my differ.
