I ride super moto-x tire (27.5 x 2.4) on a R&M Nevo 3 and really like them. It sounds as if we're riding in similar environments, so I don't think you'd be disappointed.

I have the same helmet mirror, and love it. It initially took some time to get used to adjusting it. I also have a Mirrycle mountain bike mirror, and Garmin radar; I use all three.

I have had a Nevo3 for a year and a half. I have had no problems with the exception of a small IGH problem, easily fixed. The bike (1100 ah) has more range than my butt (I'm 79), but with front suspension, Kinekt seat post, and Brooks saddle, I find the bike very comfortable. And at my age...

I use the Thule Easyfold on my Nevo 3, which has fenders and is heavy. It works very well and Thule stood behind their product when I had a problem. The clamp fastens to the seat tube and holds it securely.

When I first got my Nevo 3 (R&M) I was unable to reach its 28 mph max speed. I corrected the problem by resetting the hub to full overdrive. It's not too complicated and Enviolo has a clear video describing the process:
